摘 要:研究不同的胡萝卜渣改性纤维复合膜对苦瓜品质的影响,分析可食膜对苦瓜保鲜的作用情况。试验结果表明:涂膜保鲜的苦瓜品质要优于未涂膜的苦瓜,可食膜在苦瓜表面形成一层保护层,明显抑制果蔬营养物质的消耗,降低失水率和烂果率,抑制其呼吸作用和生理代谢,而阻隔性能越好的可食膜,保鲜效果越明显。在4个配方中BG1保鲜效果最明显,BG1配比分别为胡萝卜渣微晶纤维素1.29%、SPI3.04/%、NaAlg0.59%、Gly0.94%。Research the impact of different coating formulations on the quality of bitter gourd. The results showed that coating bitter gourd was lower on lost weight and respiration and higher on Vc, soluble sugar, protein and organic acids than no coating. Due to the surface of bitter gourd forming a protective layer, it could inhibit the consumption of fruits and vegetables nutrients, and simultaneously hold down respiration and physiological metabolism. The results showed that BG 1 was the most obvious fresh effect of bitter gourd because there were the barrier properties. The formulations of BG 1 was carrot pomace of MCC 1.29%, SPI 3.04/%, NaAlg 0.59% and Gly 0.94%.
