摘 要:目的:研究不同温度处理的小黑豆乳清蛋白对S180动物模型的影响。方法:将昆明小鼠腋下接种S180腹水瘤后随机分组,65℃和75℃蛋白高、低剂量组分别按10g/(kg.d)和3g/(kg.d)喂食,以腹腔注射环磷酰胺为阳性对照组,研究小黑豆乳清蛋白对荷瘤小鼠的抑瘤率、脏器指数及免疫功能的影响。结果:经75℃处理的小黑豆乳清蛋白在3g/(kg.d)和10g/(kg.d)摄入剂量时,没有致胰腺肿大作用,对S180肿瘤的抑制效果优于65℃处理组,且瘤与体质量比显著低于65℃处理组(P<0.05);75℃乳清蛋白组的胸腺指数较其他各组明显提高(P<0.05),与基础组处于同一水平;与模型组相比,该组动物的白细胞数、肿胀度和半数溶血值极显著升高(P<0.01),且显著高于65℃处理组(P<0.05)。结论:小黑豆乳清蛋白经过75℃处理后能显著提高抗S180肿瘤的能力。Objective: To explore the effect of small black soybehn whey protein subjected to treatment at different temperatures on S180 mouse model. Methods: The S180-bearing mice were administered with whey proteins subjected to treatments at 75 and 65 ℃ at the doses of 10 g/(kg d) and 3 g/(kg d), respectively. The mice administered with cyclophosphamide as the positive control. The inhibitory rate of tumors, organ index and immunologic function were measured. Results: The whey protein subjected to treatment at 75 ℃ at the doses of 3 g/(kg d) and 10 g/(kg d) did not result in the swelling of pancreas of the mice, and revealed more obvious inhibitory effect on S180 tumor than the whey protein subjected to treatment at 65 ℃ (P 〈 0.05). The thymus index of mice administered with 75 ℃ whey protein remained at the basal level, which was significant higher than that of other groups (P 〈 0.05). In addition, white blood cells, ear-swelling degree and HC50 of mice from 75℃ whey protein group were significantly higher than those of mice from the model group (P 〈 0.01) and 65℃ whey protein group (P 〈 0.01). Conclusion: The whey protein from the small black soybean subjected to treatment at 75℃has obvious anti-tumor capability on S180 tumors.
