摘　　要：以"PCR原理及在食品科学上的应用"教学为例,对建构主义教学模式在食品生物技术教学中的应用进行了探讨。建构主义理论下的"支架式教学"模式与"抛锚式"教学模式真正体现"以学生为中心"的理念,能激发学生学习的兴趣,能较好地体现"知识、技能、过程、情感"的统一,既有利于学生的全面发展,又有利于教学相长。Application on constructivism teaching mode is studied in the teaching of food biotechnology taking the principle of PCR and its application on foo^t science as an example in this paper. Scaffolding instruction model and anchored instruction model based on the theory of constructivism which really embody the students-centered idea, can stimulate students＇ interests on learning and have a better embodiment on the integration of knowledge, technology, procedure and emotion, which will be beneficial not only to the development of students, but also to learn and teach.
