摘 要:以香菇柄为材料,运用响应面分析法优化影响香菇柄膳食纤维提取的主要因素,即原料细度、碱液浓度、料液比和提取温度,采用多元二次回归方程拟合上述4个因素与可溶性膳食纤维得率的函数关系,确定了香菇柄膳食纤维提取的最佳条件为:原料细度144.8目、碱液浓度1.24%、料水比1∶18.6、提取温度77.3℃,由回归方程得出此条件下的可溶性膳食纤维提取得率为6.49%。The technology to extract lentinus edodes stipe dietary fibre was studied in this paper. By response surface method, the main extraction factors were optimized, including material fineness, alkali leaching concentration, material liquid ratio and extraction temperature. Using muhiquadratic regression equation to fit the functional relationships between four above factors and the soluble fiber yield, the optimal extraction conditions were determined as following, material fineness was 144.8 mesh, alkali concentration was 1.24% and the ratio of material to liquid was 1:18.6, temperature was 77.3~C, by the regression equation in the condition that the soluble dietary fiber yield reached 6.49%.
