摘  要:目的监测分析广西边远山区天峨县各类市售食品中食源性致病菌的污染状况,为控制当地食源性疾病提供科学依据。方法依据《广西食品安全风险监测工作手册》对当地市场出售的八大类食品随机抽样,并对7种食源性致病菌进行监测分析。结果 2011—2012年采集样品共166份,其中31份样品中检出5种致病菌(涉及七大类食品蛋制品中未检出致病菌),总检出率为18.67%(31/166),其中沙门菌占0.60%(1/166),金黄色葡萄球菌占11.45%(19/166),单增李斯特菌占1.81%(3/166),坂崎肠杆菌占2.41%(4/166),蜡样芽孢杆菌占2.41%(4/166);未检出肠出血性大肠杆菌O157∶H7和志贺菌。婴幼儿配方食品中检出3种致病菌,致病菌检出率高达31.25%(10/32)。结论边远山区天峨县更应加强国内知名厂家婴幼儿食品致病菌监测,并在当地建立食源性疾病风险预警评估机制,有效预防食源性疾病的暴发流行。Objective To detect and analyze the contamination situation of foodborne pathogens in various types of food in remote mountainous Tian'e county and to provide a scientific basis for the control of the local foodbome illness. Methods The eight major categories of foods from sold on the local market were randomly sampled and 7 kinds of foodbome pathogens were monitered and analyzed according to the Guangxi Food Safety Risk Monitoring Manual. Results 166 samples were collected from 2011 to 2012, five kinds of bacteria were detected in 31 samples in seven categories of foods, the total positive rate was 18.67 (31/ 166), including Salmonella 0.60% (1/166), Staphylococcus aureus 11.45% (19/166), Listeria monoeytogenes 1.81% (3/166), En- terobaeter sakazakii 2.41% (4/166),Bacillus cereus 2.41% (4/166),without Enterohemorrhagie Eseheriehia coli O157 : H7 and Shigella bacteria. The detection rate of infant formula food pathogens was 31.25%, including three types of pathogens. Conclusion The remote mountain Tian'e county should strengthen to monitor pathogens of infant foods produced by famous domestic manufac- turers and the foodborne disease risk warning assessment mechanisms should be established,which can effectively prevent the break of foodborne disease.
