摘  要:对滇红、祁红、川红3种工夫红茶利用真空浓缩工艺制备茶膏,分析其理化性质及感官色差。结果表明,自制滇红茶膏的蛋白质含量(16.41%±0.68%)与市售滇红茶膏(16.75%±0.53%)无显著差异,川红茶膏蛋白质含量(18.35%±0.72%)显著高于其他3种自制茶膏。自制滇红茶膏的总糖含量(9.28%±1.03%)与祁门和川红茶膏总糖含量(5.90%±0.84%,4.29%±1.61%)有显著差异。4种茶膏中不同茶色素含量均为茶红素>茶褐素>茶黄素,自制滇红茶膏茶红素含量与市售滇红茶膏无显著差异,祁红和川红茶膏无显著差异,滇红茶膏显著高于祁红和川红茶膏;3种自制茶膏的茶黄素含量均有显著差异,川红茶膏的茶黄素含量最高,达4.56%±1.18%;祁红茶膏茶褐素含量最高,达17.53%±2.46%,滇红与川红茶膏的茶褐素含量无显著差异。感官评定表明滇红红茶得分最高,色差分析表明3种自制茶膏色差差异不明显。The Black tea in Yunnan, Keemun and Sichuan is concentrated by reducing pressure and dried by vacuum, and three tea creams are obtained, then the physical and chemical properties and sensory color difference are analyzed. The results show that the protein contents of Yunnan black tea cream (16.41% ± 0.68%) and commercially Yunnan black tea cream (16.75% ± 0.53%) have no significant difference. The protein content of Sichuan black tea cream (18.35% ± 0.72%) is significantly higher than the other three kinds of tea cream. Total sugar content of Yunnan black tea cream (9.25% ± 1.03%) has significant differences with Keemun (5.90% ± 0.84%) and Sichuan Black tea cream (4.29% ± 1.61%) . The tea pigment content of four kinds of tea cream is thearubigins〉theabrownin〉theaflavin. Thearubigins of Yunnan black tea cream and commercially Yunnan black tea cream have no significant difference, and Keemun and Sichuan black tea cream also have no significant difference. Yunnan black tea cream is significantly higher than Keemun and Sichuan black tea cream. Theaflavin contents of three homemade black tea creams have significant difference, and theaflavin content of Sichuan black tea cream is highest 4.56% ± 1.18%. Theabrownin of Keemun black tea cream is highest 17.53% ± 2.46%, and Yunnan black tea and Sichuan black tea cream have no significant difference. Sensory evaluation shows that the highest score is Yunnan black tea, and the chromatic difference analysis shows that the three kinds of homemade black tea cream color difference is not obvious.
