摘　　要：作为一种天然食用色素,玉米黄色素因其显著的功能特性受到人们的关注,其提取及纯化成为学者们多年来的研究热点。文章综述了目前玉米黄色素的提取、纯化与分析检测研究现状,并对其研究开发前景进行了展望。Maize yellow pigment is a kind of natural edible pigment which has increasingly aroused people＇s concerns owing to its out standing functional properties. Therefore, its extraction and purification process has been research focus for years. Research progress of ex traction, purification and components analysis of maize yellow pigment was reviewed. The development prospect of maize yellow pigment was also forecasted.
