摘  要:研究以生姜渣为原料,经过预处理、复合酶解、瞬时超高压,干燥成粉等工序加工生产膳食纤维,重点研究对生姜渣的复合酶解方法及瞬时超高压作用对生姜膳食纤维的改性作用。从而增加膳食纤维中可溶性纤维的含量,提高活性,改善风味和口感,使生姜膳食纤维的可溶性膳食纤维含量由5%提升到35%以上。the research applied the ginger residue as raw material. With instantaneous high pressure we use new compound enzymolysis technology. After pretreatment, enzymatic hydrolysis, instantaneous high pressure, the residue is dried and becomes powder which is prepared for production of dietary fiber. The f℃ us of the study is on modification effects of compound enzyme on the ginger residue and the pressure effects on dietary fiber of ginger. As a result,we increase the percentage of soluble dietary fiber, improve the activity, upgrade the flavor and taste, making the portion of ginger dietary fiber and soluble dietary fiber raised from 5% to over 35%.
