摘 要:为实现用生物发酵法替代化学法快速高效的脱除蟹壳中的碳酸钙,以15株乳酸菌作为出发菌株,采用与蟹壳共发酵的方式进行了筛选,筛选出脱钙效果最好的菌株,并进行了主要影响因素的考察。结果表明,编号为AS 1.2437的菌株脱钙效果最好。发酵时间越长、葡萄糖浓度越高、固液比越小,脱钙效果越好。在接种量10%,固液比5g/100mL,糖浓度10g/100mL,发酵温度为30℃条件下发酵5d,脱钙率高达95.5%。The traditional chemical processing of removing calcium carbonate to extract chitin from crab shells was applied with hydrochloric acid treatment.This processing created large amounts of toxic waste that without expensive further treatment would pollute the environment.To overcome this problem,an alternative method using lactic acid fermentation was researched.In this study,fifteen strains of lactic acid bacteria were screened to select the best one for decalcification.The strain of CGMCC AS 1.2437 was selected and searched the optimized fermentation condition.The results showed that the decalcification ratio of crab shell depends on the fermentation time,the glucose concentration and the solid-liquid ratio during culture.The decalcification ratio of crab shell could up to 95.5% under the condition of 10% inoculation,10g/100ml solid-liquid ratio,10g/100ml glucose,30℃ and 5d.
