摘  要:测定了北方养殖仿刺参(2009年12月取自大连棒棰岛海产有限公司,体质量300~400g)与南移在宁波沿海养殖仿刺参(2010年3月取自宁波象山黄皮岙,体质量300~400g)的营养成分。结果显示,南方养殖仿刺参水分和粗脂肪含量显著高于北方养殖仿刺参,而灰分和粗脂肪含量显著低于北方养殖刺参。南方养殖刺参氨基酸平均含量为(67.00±0.12)g/100g(干质量),高于北方刺参的(52.58±0.11)g/100g,必需氨基酸含量分别为(19.90±0.04)g/100g,(14.38±0.21)g/100g,差异显著;南北刺参的脂肪酸含量分别为1.39%和3.33%,其中不饱和脂肪酸比例分别为(82.74±1.14)%、(78.53±0.67)%。The nutritional compositions were compared in sea cucumber Apostichopus japonicus weighing from 300 g to 400 g farmed in northern China (collected from Dalian Bangcui Island Seafood Co. , LTD) and in southern China (collected from Xiangpiao at Xiangshan in Ningbo) by routine methods. The moisture, and rude protein contents were found to be higher in the sea cucumber farmed in southern China than those in the sea cucumber farmed in northern China, while the contents of ash, and crude fat level were found lower than in the sea cucumber farmed in northern China. The sea cucumber farmed in southern China had higher contents of amino acidsF(67.00+0.12) g/100 g) including (19.90+0. 04) g/ 100 g of essential amino acids than the sea cucumber farmed in northern ChinaP(52.58+0.11) g/100 g-] with(14.38+0.21) g/100 g of essential amino acids did, significant difference in the essential amino acid levels. There was 1.39M of fatty acids and(82. 74+1.14)% of unsaturated fatty acids in the sea cucumber cultured in southern China and 3.33M of fatty acids, and (78. 53+0.67)% of unsaturated fatty acids in the sea cucumber cultured in northern China.
