摘　　要：红枣是中国传统食品,具有药食两用价值。文章介绍红枣的营养及保健功能,中国红枣产业的资源、贸易和加工发展现状,以及红枣产品的研发现状,并对中国红枣加工业的发展趋势进行展望,旨在为红枣产业发展和产品开发提供参考。Jujube（Ziziphus jujuba Mill） is traditional Chinese food,which can be used as food and medicine.This paper described the nutritional components and health care functions,jujube resources,trade and processing in China,current research and development status of jujube products and looking forward jujube processing industry development trend.The objective was to provide references for the development of jujube industry and products.
