摘 要:对凉山半细毛羊改良羊和布拖黑绵羊的氨基酸和矿物质进行了全面分析,凉山半细毛羊改良羊肉中氨基酸和矿物质含量丰富,总量均高于布拖黑绵羊;改良羊肉中的组氨酸和赖氨酸含量达到了理想蛋白质氨基酸的比例,并且钙、磷含量显著地高于黑绵羊(P<0.05),而布拖黑绵羊肉铜含量极显著地高于改良羊(P<0.01)。Amino acids and mineral elements of mutton was determined on crossbred Liangshan semi-fine wool sheep and Butuo black sheep.The results indicated that crossbred sheep were rich in amino acids and minerals and the total amount of amino acids and minerals showed higher than that of Butuo black sheep.The content of lisine and histidine in essential amino acids satisfied the ideal ratio in protein in the crossbred sheep and the content of calcium and phosphorus was higher than the Butuo black sheep (P < 0.05) ; However,only the content of copper on mutton of Butuo black sheep was significantly higher than that of the crossbred sheep(P <0.01).
