摘 要:采用火焰原子吸收光谱法测定普洱茶中Mg、Zn、Na、Cu、Ca、Mn 6种矿质元素含量,运用单因素方差分析、相关性分析及聚类分析研究不同冲泡条件下普洱茶中矿质元素的溶出计量特征。研究结果显示,普洱茶中6种矿质元素含量由高到低依次为Mg>Na>Ca>Mn>Zn>Cu;同一样品随冲泡时间的增加,矿质元素溶出量升高,溶出率呈上升趋势;随冲泡次数增多,溶出率呈下降趋势。聚类分析结果表明,普洱茶中6种矿质元素溶出计量特征表现出时间特性。研究结果为普洱茶矿质元素的合理摄入及其计量学研究提供参考依据。Six mineral elements including Mg, Zn, Na, Cu, Ca and Mn of Pu-erh tea were determined by FAAS method. The relationships between leaching-amount and way of infusing were analyzed by one factor analysis of variance, correlation analysis and clustering. Result showed contents of 6 elements in Pu-erh tea were in the order of Mg〉Na〉Ca〉Mn〉Zn〉Cu. With the extension of brewing-time, the leaching- amount of mineral elements was increased. Cu was more hardly to extent than other elements in same time. Clustering analysis suggest dissolution chemometrics characteristic of Pu-erh tea had time pattern. The research proved useful information of mineral elements in Pu-erh tea and base data of characteristic research of dissolution characteristic of the tea.
