摘 要:目的了解甘肃省居民米面及节令食品中蜡样芽孢杆菌污染状况,为食品安全性风险监测提供依据。方法按《全国食源性致病菌监测网工作手册》中蜡样芽孢杆菌检验标准操作程序操作。结果2009。2011年甘肃省地方特色米面食品和节令食品中蜡样芽孢杆菌检出率分别为3.33%、15.65%、7.68%,总检出率为8.26%;地方特色米面食品蜡样芽孢杆菌检出率为13.03%,显著高于节令食品的2.20%;第一、四季度蜡样芽孢杆菌检出率显著高于第二、三季度。结论甘肃省地方特色米面食品蜡样芽孢杆菌污染较为严重,提示甘肃省食品监管部门对此类食品应加强监督管理;今后应加强对蜡样芽胞杆菌在食物中的含菌量及产毒状况的监测研究。Objective To find out contamination situation of Bacillus cereus in local rice and wheaten food and seasonable food for residents in Gansu Province, to provide evidence for risk surveillance of food safety. Methods Research was con- ducted according to the standard operation procedures for Bacillus cereus inspection in The National Food-borne Pathogenic Bacteria Monitoring Network Workbook. Results During 2009-2011, detection rate of Bacillus cereus contamination in lo- cal rice and wheaten food and seasonable food was 3.33%, 16.65% and 7.68%, respectively, with a total detection rate of 8.26%. While it was 13.03% for the local rice and wheaten food, significantly higher than that of 2.20% for the seasonable food. The detection rate was significantly higher in the first and fourth season than in the second and third season. Conclu- sions The contamination of Bacillus cereus in local rice and wheaten food is quite severe. This evidence indicates that food safety department in Gansu Province should pay more attention to administration and monitoring. Also, the surveillance and research of the amount of bacteria and poison production need to be enhanced.
