摘 要:以新鲜豆渣为主要原料,采用纤维素酶对其进行酶解获得水溶性膳食纤维(SDF)提取液,再加一些辅料物质,混合调配成体系均一,酸甜适口,滋味纯正的具有一定保健功能的膳食纤维饮料,且该产品具有较好的稳定性。制备SDF提取液最佳酶解工艺为:纤维素酶添加量1 200 U/g,酶解pH 5,酶解温度60℃,酶解时间2 h,液料比30︰1(mL/g)。膳食纤维饮料最优工艺配方为:白砂糖添加量7.07%,稳定剂添加量0.2%,柠檬酸添加量0.25%,维生素C添加量0.02%和SDF提取液质量浓度6.82 mg/mL。The production of SDF from soybean dregs by enzymatic hydrolysis of cellulase was added some excipient, to mix a kind of health care function of dietary fiber beverage, which was homogeneous, sweet and good taste. And the product has good stability. The optimal enzymatic hydrolysis condition for preparing SDF extract as follows: added eellulase 1 200 U/ g, enzymolysis pH was 5, enzymolysis temperature was 60℃, enzymolysis time was 2 h, liquid-solid ratio 30 : 1 (mL/ g). The optimal technological formula for dietary fiber beverage as follows: adding 7.07% white sugar, 0.2% stabilizer, 0.25% citric acid, 0.02% VC and concentration of SDF extract was 6.82 mg/mL.
