摘 要:以青海湖裸鲤为对照,研究循化(海拔2 300 m)、扎陵湖(海拔4 294 m)花斑裸鲤肌肉氨基酸含量,样品取自青海省玛多县内扎陵淡水湖泊、循化县境内苏只水电站黄河鱼类增殖站网箱的人工养殖花斑裸鲤。结果显示,扎陵湖花斑裸鲤干样中17种氨基酸总含量(83.59 g/100 g),7种人体必需氨基酸含量(34.45 g/100 g),以及4种呈味氨基酸含量(30.54 g/100 g)均高于循化花斑裸鲤与青海湖裸鲤,以上差异均不显著(P>0.05);扎陵湖花斑裸鲤肌肉的氨基酸评分(ASS)、化学评分(CS)和必需氨基酸指数(EAAI)均高于其余循化花斑裸鲤与青海湖裸鲤,其中,必需氨基酸指数分别是青海湖裸鲤的1.4倍及循化花斑裸鲤的1.38倍。花斑裸鲤的营养价值高于现有报道的淡水鱼类,因此,花斑裸鲤营养价值最高,具备非常好的开发前景。Qinghai Lake naked carp for the control, the study on Xunhua (elevation 2 300 m), Zhaling (elevation 4 294 m) piebald naked carp muscle amino acid content, samples were taken from the of Maduo Prefecture, Qinghai Province Yellow River section and tie Ling freshwater lakes, Xunhua County Su Hydropower proliferation of stations of the Yellow River fish cage farmed piebald naked carp. There are piebald naked carp 17 kinds of amino acid content (83.59 g/100 g), 7 kinds of essential amino acid content (34.45 g/100 g), as well as four flavor amino acids content (30.54 g/100 g) in Zhaling Gymncypris eckloni which was higher than that of the Xunhua G. eckloni and the Qinghai Lake naked carp above and differences were not significant (P〉 0.05) ; Zhaling G. eckloni muscle amino acid score (ASS), chemical score (CS) and essential amino acid index (EAAI) were higher than the remaining the Xunhua piebald naked carp and Qinghai Lake naked carp, of which the essential amino acid index 1.4 times of the Qinghai Lake naked carp and 1.38 times of Xunhua piebald naked carp. The G. eckloni the nutritional value is higher than the existing coverage of freshwater fish, spotted the nutritional value of naked carp has a very good development prospects.
