摘  要:筛选高产胞外多糖乳酸菌,并对其鉴定。通过涂布平板、划线分离得乳酸菌,初筛测其粘度和复筛测其胞外多糖产量得高产胞外多糖乳酸菌优良菌株,采用培养特征、形态特征和生理生化特征鉴定。试验从市售伊利牌酸乳中分离纯化出37株乳酸菌,从中选出一株高产胞外多糖的乳酸菌菌株G6,经鉴定为保加利亚乳杆菌。本研究可为高产胞外多糖乳酸菌发酵剂的开发和应用提供理论依据。Screening and identification of Lactic acid bacteria with high yield of extracellular polysaccharide(EPS). Lactic acid bacteria were purified by spreading plate and crossing separation, the excellent strain of Lactic add bacteria with high yield of EPS was selected after preliminary screening done to test the viscosity and secondary screening done to test the production of EPS, which was identified by cultural characteristics, morphological characteristics and physiological and biochemical characteristics. 37 strains of lactic acid bacteria had been isolated and purified from Yili brand yogurt in the market, a Lactic acid bacteria strain G6 with high yield of EPS was selected, which was identified as Lactobacillus bulgaricus. The experiment can offer theoretical basis to the exploitation and application of Lactic acid bacteria fermentation agent with high yield of EPS.
