摘 要:改革开放以来特别是近年来我国与国外交往、经贸日渐发展,国内人民对洋酒从认识到嗜爱。我国蔗糖业受土地制约及进口糖和甜味剂的冲击,使单一糖产品经济效益欠稳定。延长产业链和研发高附加值综合利用产品等变得很有必要。近年有些蔗糖主产地区已投巨资开展朗姆酒基地建设。为在技术上支持此举措,有必要搜集世界产朗姆酒最著名的加勒比地区的技术及生产经验提供给有关企业及科研单位参考。知己知彼,才能百战不殆或少走弯路。本文介绍的技术细节有些与我国过去生产采用的技术略有差异,强调精深细作小而精。希望本文有助于我国朗姆酒生产能吸取别人成功经验,结合本国制酒传统精髓,开发出自主创新的民族品牌、中国特色的朗姆酒。Since the open policy, communication with other countries has been more frequent. Mutual trading has also been developed;accordingly some of the more favorite spirits in the world market began to be accepted by Chinese consumers. In the mean time, by-products development is intensely purchased by sugar mills due to the increasing uncertainty of economical gain. Rum manufacture as one of the by-products of sugar mill, are now going into market domestically due to growing needs in China. Some investors already started constructing manufacture basis in china. In order to supply know-how regarding rum manufacture, information from the famous rum manufacturers in Caribbean countries were collected. Experiences of rum manufacture in China in the past are also introduced so as to find out a new and special model of rum manufacture technique both from experience of foreign countries and of China.
