摘 要:以辣根、薄荷为主要原料,淀粉、奶粉等为辅料,开发一种纯天然的醒脑型含片。以感官指标为评价标准,通过单因素试验,确定蔗糖、柠檬酸、辣根粉、淀粉和奶粉等的添加量。在此基础上,以4因素3水平的优选正交试验获得醒脑型含片的最佳生产工艺。结果表明,醒脑型含片的最佳配方如下:甜酸比25∶1、辣根粉3.0%、淀粉27%、薄荷-乙醇混合溶液2.3mL和奶粉10.0%等。其关键生产工艺条件为:用单冲压片机进行手动压片;压制成品为半径7 mm,厚2 mm的圆片。In this paper, horseradish and mint were used as main materials, starch and milk powder were used as adjuvants, a pure natural chewable table which had refreshing effect was developed. By means of the evaluation criterion, namely, the sensory, quality of chewable tablet, this study was worked on single factor experiments of changing the amount of sugar, citric acid, horseradish powder, starch and milk powder, and orthogonal experiments to obtain the best technological conditions for the production of chewable tablet of refreshing type. The results showed that the optimum formula of chewable tablet of refreshing type was as follows sweet : acid (25 : 1), horseradish powder 3.0%, starch 27.0% and milk powder 10.0%. The critical process condition was to use single punch tablet press machine to press tablet manually, the radius and heights of the tablets were 7 and 2 mm, respectively.
