摘　　要：食品机械的运转离不开润滑剂。因普通工业用润滑剂的泄露或污染导致的食品安全问题值得高度关注。该文概述了普通润滑剂导致的食品质量与安全隐患,分析了其污染途径;同时,对各类食品级润滑剂的组成、特点、应用等进行了综述,并结合国内外食品级润滑剂研发现状,进行了讨论和展望。Lubricants are indispensible for machinery in food industry. Attention should be paid to food quality and safety by industrial lubricants contamination or leakage. In this paper,food safety risks and contamination ways resulted from conventional lubricants were reviewed. The constituents, classifications,and application of food-grade lubricants were summarized. Research on food-grade lubricants based on their present situation were discussed and prospected.
