摘 要:茅台镇多雨、高热的环境有利于曲虫生长,酱香型白酒生产中的高用曲量使得曲虫对茅台镇酱香型白酒生产的影响更为突出。将生产用曲的曲仓和实验室贮存进行对比研究,探讨曲虫对大曲的危害。结果表明,经过4个月的贮存,曲仓贮存曲样的质量平均损耗率高达66.98%,理化指标,如淀粉含量、酸度、糖化力及发酵力下降;而对照曲样质量损耗率较小,存放在培养箱内(25℃)的大曲平均损耗率为5.16%;而用氮气处理的曲样,平均损耗率仅为3.92%,且对照曲样的淀粉含量、酸度、糖化力及发酵力变化较小。曲虫对大曲的危害也能从外观上得到明显体现。The rainy and hot environment in Maotai Town is beneficial to the growth of Daqu pests. The effects of Daqu pests on Jiang-xiang liquor production mainly present in the usage of Daqu. In this experiment, Daqu stored in Daqu storeroom was compared with Daqu stored in the Lab to investigate the harzards of Daqu pests to Daqu. The results suggested that, after 4-month storage, the average quality loss rate of Daqu sam- ples in storeroom reached as high as 66.98 %, and the physiochemical indexes including starch content, acidity, saccharifying power and ferment- ing power decreased, however, the quality loss rate of contrast Daqu samples was comparatively low, for example, the average loss rate of Daqu samples stored in incubator (25 ℃) was 5.16 %, and the average loss rate of Daqu samples treated by nitrogen was only 3.92 %, and the change in those ohvsiochemical indexes was slight. Besides, the hazard dem'ee of Daclu pests to Daqu could be evidently observed in Daqu appearance.
