摘 要:目的了解常州地区市售食品污染食源性致病菌的状况,为食源性疾病的防控工作提供依据。方法 2010-2012年采集常州地区市场上14种550份食品样品,分别进行沙门菌、志贺菌、副溶血性弧菌、创伤弧菌、金黄色葡萄球菌、单增李斯特菌、大肠埃希菌O157:H7、蜡样芽胞杆菌、空肠弯曲菌、阪崎肠杆菌分离和鉴定。结果 550份食品中检出致病菌54株,阳性检出率9.82%。3年来致病菌检出率呈上升趋势(P<0.001),检出率由高到低依次为副溶血性弧菌(15.00%)、蜡样芽胞杆菌(12.70%)、金黄色葡萄球菌(3.47%)、单增李斯特菌(3.19%)、沙门菌(0.60%)。食源性致病菌污染严重的前3类食品是,米粉/凉皮/米线/盒饭(20.63%)、鲜冻水产品(19.80%)、速冻熟制米面制品(16.67%)。结论常州市海产品和米粉/凉皮/米线/盒饭中副溶血性弧菌和蜡样芽孢杆菌污染较为严重。Objective To investigate the polluting situation of the food-borne pathogens in market sold food and provide ba- sis for prevention and control strategies of food-borne diseases in Changzhou. Methods Salmonella, Shigellosis, Vibrio parah- aemolyticus, Vibrio parahaemolyticus, Staphylococcus aureus, Listeria monocytogenes, Escherichia eoli O157: H7, Bacillus cereus, Campylobacter jejuni, Enterobacter sakazakii were isolated and identified from 550 samples of 14 kinds of market-sold food. Results A total of 54 pathogens were detected from 550 food samples and positive rate was 9.82%. The detection rate showed an increasing trend from 2010 to 2012 (P〈 0. 001 ). Detection rate in descending order was Vibrio parahaemolyticus (15.00%), Bacillus cereus (12.70%), Staphylococcus aureus (3. 47%), Listeria monocytogenes (3. 19%), and Salmonella (0.60 % ). The top three categories of serious polluted foods were rice flour/ cold noodle/rice noodle/boxed lunch (20.63 % ), fresh frozen aquatic products (19.80%) and quick-freezing cooked rice flour products (16. 67%). Conclusion The Vibrio parahaemolyticus and Bacillus cereus pollution in the aquatic products and the rice flour/ cold noodle/ rice noodle/ boxed lunch were especially serious in Changzhou.
