摘  要:以大豆分离蛋白为壁材,α-亚麻酸乙酯为芯材,在单因素试验基础上,利用响应面法对α-亚麻酸乙酯微胶囊化的工艺进行优化.选取试验因素与水平,依据回归分析确定各工艺条件的影响,以微胶囊包埋率为响应值作响应面和等高线.在分析各个因素的显著性和交互作用后,得出微胶囊化的最佳工艺条件为:固形物含量10%、芯壁比1∶2、喷雾干燥进口温度168℃.在此条件下,α-亚麻酸乙酯微胶囊的包埋率为52.62%.The preparation process of alpha-linolenic acid ethyl ester microcapsule was optimized by response surface methodology based on single factor experiments by using soy protein isolate as wall material and alpha-linolenic acid ethyl ester as core material. Selecting factors and levels, we determined the influences of each factor by regression analysis, and constructed response surface and contours by taking the microcapsule embedding rate as the response value. The optimum microencapsulation conditions were determined as follows after analyzing the significance of each factor as well as their interaction effect: solid content 10%, core-to-wall ratio 1:2, and spray drying inlet temperature 168 ℃. Under the optimum conditions, the embedding rate of alpha-linolenic acid ethyl ester microcapsule was 52.62%.
