摘 要:探讨1种基于电子鼻的草鱼新鲜度快速检测方法。对4℃贮存的草鱼样品的挥发性气体的变化情况进行检测,使用主成分分析和随机共振信噪比分析方法处理电子鼻数据。以草鱼的菌落总数作为微生物指标,通过修正的Gompertz方程建立微生物生长模型,并作为新鲜度预测的辅助手段。综合电子鼻与微生物的分析结果建立草鱼新鲜度预测模型及基于信噪比值的鲜度指标。试验结果表明,该方法可准确、快速地检测草鱼样品的新鲜度,具有较好的重复性,有望在水产品新鲜度检测中得到应用。A grass carp freshness fast detection method based on electronic nose technique was investigated in this paper.Experiments were conducted to investigate the change of volatile components of grass carp samples stored at 4 ℃ using electronic nose.Electronic nose data was analyzed by principal component analysis(PCA) and stochastic resonance analysis method.The total viable count(TVC) of the samples was also measured as freshness index.In terms of establishing bacteria growth curves of grass carp,modified Gompertz model was used as an estimating standard of grass carp freshness.Combining the results of electronic nose with TVC,a grass carp freshness predicting model was developed based on signal-to-noise ratio eigen values The results indicate that the method predicted the freshness of grass carp with high accuracy,good repeatability,fast operation,etc.This method is promising in aquatic product quality detecting applications.
