真空后喷涂玉米秸秆颗粒饲料对兔肉品质的影响

摘　　要：采用常规检测方法,结合气相色谱法(GC)分析了真空后喷涂玉米秸秆颗粒饲料对兔肉食用品质、营养成分、脂肪酸组成和肌糖元含量的影响。结果表明:真空后喷涂玉米秸秆颗粒饲料组(A组)失水率、熟肉率、剪切力值、pH、色度值(L*值、a*值、b*值)与常规的配合颗粒饲料组(B组)差异不显著(P>0.05);A组水分、灰分、脂肪、蛋白质、氯化钠、、总磷、胆固醇等营养成分与B组差异不显著(P>0.05);2个处理组间8种脂肪酸组成和含量、总糖、还原糖和肌糖元含量差异均不显著(P>0.05)。表明,采用真空后喷涂玉米秸秆颗粒饲料饲喂肉兔,对兔肉的食用品质、营养成分、脂肪酸组成和糖代谢无影响,可以代替常规的配合饲料。This paper researched the affection of corn straw pellet feed liquid addition under vacuum post spraying process Io tile edible quality, nutritional composition, fatty acids and muscle glycogen of rahhit meat. The edible quality, nutritional composition, fatty acids and muscle glycogen were analyzed hy using physical and chemical testing and gas chromatographic method. The processing of corn straw pellet feed liquid addition under vacuum post spraying had little significantly effect on the edible quality, nutritional composition, fatty acids and muscle glycogen. The cost was very low of corn straw pellet feed liquid addition under vacuum post spraying process compare with the general formula feed, so this study offered a certain theoretical basis for the apply of corn straw pellet feed liquid addition under vacuum post spraying process.
