摘 要:对两种甜酒酒曲进行了分离、纯化和复壮 ,选育出一株酶活力高的根霉和两株发酵力强的酵母菌 ,经组合培养后制成优质种曲 ,具有良好的生产性状 ,适于工厂化生产。Two kinds of rum distillers yeast were carried through separation,purification and rejuvenation in the article.A plant of rhizopus which has more supernal enzyme energy and two plants of microzyme which have greater fermented ability were selected.High quality rum distillers yeast was made by way of resultant cultivation.It took on better manufacture properties and it would be suitable for industrial production.
