摘　　要：色素作为食品添加剂应用于食品中已有几个世纪的历史。除了赋予食品艳丽的外观外，最近的研究表明有一些天然色素还具有多种生理功能，可用于保健食品工业和医药工业等。Color in one form or another has been added to our foods for centuries to enhance its evaluation. Natural pigment can give the food delighted colors as well as physiological function. It can be applied to functional food manufacturing and medicine industry.
