摘　　要：花青素长期被人类食用，并且植物资源丰富。介绍了其作为一种天然食用色素的应用研究进展。The anthocyanins have a long history as a part of the human diet, and have abundant plant resources. As natural food colorants, the research and application advanes of anthocyanins is presented in this review.
