摘  要:详细分析了红花菜 (浙江产 )中各营养成分的含量 ,结果表明红花菜中氨基酸的总量为 7.0 18% ,粗蛋白含量为 13.96 % ,总糖含量为 8.31% ,并含有丰富的胡萝卜素和微量元素。红花菜中天门冬氨酸的含量相对较高 ,可以达到总氨基酸含量的 18.1%。Carthamus tinctorus L. is an economic crop with very high edible and medicinal values. The nutritional components of Carthamus tinctorus L. produced in Zhejiang Province were analyzed. The result showed that in Carthamus tinctorus L., the contents oftotal amino acids, crude protein and polysaccharides were 7.018%, 13.96% and 8.31% respectively, that the carotene and trace elements were abundant and that the content of aspartic acid was relatively rather high and could reach 18.1% of total amino acids content.
