摘 要:目的了解郑州市2017年食品中食源性致病菌的污染现状,进而为开展食品安全风险评估和预防食源性疾病提供科学依据。方法对郑州市7类共202份食品样品按照《2017年国家食品污染和有害因素风险监测工作手册》中的标准操作程序,进行致病菌(致泻性大肠埃希菌、弯曲菌、小肠结肠炎耶尔森菌、阪崎肠杆菌、金黄色葡萄球菌、沙门菌、蜡样芽胞杆菌、单核细胞增生李斯特菌、副溶血性弧菌)检测。结果 202份食品样品中,共检出致病菌13株,总检出率为6. 44%。其中沙门菌9株,检出率为5. 56%(9/162),致泻性大肠埃希菌4株,检出率为11. 11%(4/36)。7类食品中即食非发酵性豆制品的阳性菌株检出率最高,为30. 77%,其次为肉与肉制品(13. 16%)、水果及其制品(10. 00%)、调味品(8. 33%)、餐饮食品(1. 79%)。结论郑州市市售食品中存在一定的食源性致病菌污染,主要污染菌为沙门菌和致泻性大肠埃希菌。Objective To investigate the contamination status of food-borne ,pathogens in Zhengzhou City in 2017,so as to provide scientific basis for food safety risk assessment and prevention and control of food-borne diseases.Methods According to the standard operating procedures in National Handbook of Food Contaminatioh and Risk Factors-Monitoring in 2017,202 food samples in seven categories.were conducted for the detection of pathogenic bacteria in Zhengzhou City in 2017,including diarrhea Escherichia coli ,Campylobacter ,Yersinia enterocolitica ,Enterobacter sakazakii ,Staphylococcus aureus ,Salmonella, Bacillus cereus,Listeria monocytogenes,Vibrio parahaemolyticus.Results In 202 samples,13 strains of pathogens were detected,with the overall positive rate of 6.44%,among which 9 strains were Salmonella (5.56%,9/152),4strains were diarrhea Escherichia coli (11.11%,4/36).The detected rate of non-fermented soybean products was the highest (30.77%), followed by meat and meat products (13.16%),fruits and fruit products (10.00%),condiments (8.33%),food and beverage (1.79%).Conclusion The contamination of food-borne pathogens exists in Zhengzhou City,and the main contaminating bacteria are Salmonella and diarrhea Escherichia coli.
