摘  要:本研究从啤酒污染样品中分离到24株细菌,经鉴定分属11个菌种。利用耐酒花基因horA、horB和horC的特异引物分析表明,不同菌株的耐酒花基因存在差别。研究中首次在啤酒样品中分离到耐乙酸乳杆菌(Lactobacillus acetotolerans )。利用耐酒花基因对耐乙酸乳杆菌的定量检测结果表明,检出限可以达到2.2×10^2CFU/mL。研究结果增加了啤酒腐败菌库中腐败菌的种类,为啤酒生产企业开发针对本企业腐败菌检测提供方法参考。Twenty-four strains of bacteria were isolated from beer samples and identified as 11 species.The specific primers of hop-resistant genes horA,horB and horC were used to analyze the difference of hop-resistant genes among them.Lactobacillus acetotolerans was isolated from beer samples for the first time in this study. Quantitative detection of Lactobacillus acetotolerans by hop-resistant gene showed that the detection limit could reach 2.2×10^2CFU/ml.The research results increase the types of spoilage bacteria in beer spoilage bacteria bank,and provide reference for beer manufacturers to develop detection methods for spoilage bacteria in their own enterprises.
