2013-2017年222份高铁快餐盒饭微生物指标污染状况分析

摘　　要：目的了解沈阳铁路局高铁快餐盒饭中的微生物污染状况,预防食源性疾病的发生,保障旅客的身体健康。方法对沈阳铁道双瑞餐饮有限公司生产的高铁快餐盒饭,按照沈阳铁路局企业标准《气调冷冻盒饭》Q/SYT 357-2014铁道部办公厅发布的《铁路动车快餐盒饭食品安全控制要求》进行检验。结果 2013-2017年共检验高铁盒饭222份,其中大肠菌群不合格率为22. 07%,菌落总数不合格率为14. 41%,大肠埃希菌不合格率为9. 46%,金黄色葡萄球菌不合格率为3. 15%,沙门菌、副溶血弧菌、产气荚膜梭菌均未检出。检验项目按沈阳铁路局标准合格率为76. 1%,按铁道部标准合格率为88. 3%。结论菌落总数、大肠菌群、大肠埃希菌超标严重,沙门菌、副溶血弧菌、产气荚膜梭菌均未检出。沈阳铁路局快餐盒饭评价标准严于铁道部标准。Objective To understand the microbial contamination in box lunches on high speed trains of Shenyang Railway Bureau,prevent the occurrence of foodborne diseases and ensure the health of travelers. Methods Box lunches produced by Shenyang Railway Shuang Rui Food Co.,Ltd. were inspected according to the enterprise standard Air-conditioned Frozen Box Lunches of Shenyang Railway Bureau and Requirements for Food Safety Control of Box Lunches on Bullet Trains issued by the General Office of Ministry of Railways. Results A total of222 box lunch samples were inspected. The incompliance rate was 22. 07% for coliform group,14. 41% for total number of colonies,9. 46% for E. coli and 3. 15% for Staphylococcus aureus. Salmonella,Vibrio parahaemolyticus and Clostridium perfringens were not detected. The compliance rate was 76. 1% according to the standard of Shenyang Railway Bureau and 88. 3% according to the standard of Ministry of Railways.Conclusion The total number of colonies,coliform bacteria and E. coli were seriously beyond the standards;Salmonella,Vibrio parahaemolyticus and Clostridium perfringens were not detected. The box lunch evaluation standard of Shenyang Railway Bureau is stricter than that of Ministry of Railways.
