摘  要:研究结果表明,砖茶中全氟含量与水浸出氟含量呈极显著的直线正相关;砖茶的氟浸出量与煮熬(或冲泡)时间之间呈极显著的对数函数曲线相关;砖茶的氟浸出量与煮熬(或冲泡)次数呈极显著的指数函数曲线相关;茶水比越小,砖茶氟浸出率越高,茶水比越大,砖茶氟浸出率越小;无论是煮熬法还是冲泡法,第一泡茶汤的氟浸出量占氟总浸出量的50%以上;而在相同的茶水比、相同的时间条件下,煮熬法的氟浸出量高于冲泡法15个百分点以上;建议在饮用砖茶时,适当增大茶水比,缩短煮熬或冲泡时间,甚至第一泡茶汤只作冲洗茶叶不饮,改传统的煮熬法为冲泡法,这样可以明显地减少人体对氟的摄入,防止氟中毒。The result showed that the total fluorine in brick tea was positively linear-correlated with the fluorine content in tea infusion; the fluorine extracting amount of brick tea was very closely correlated with the boiling (or infusing) time and expressed in a logarithm function curve; while it was very closely correlated with boiling (or infusing) times and expressed in an exponential function curve. The smaller of the ratio between tea and water, the higher of the fluorine extracting rate in brick tea. Both with boiling or infusing, fluorine extracting amount in the first infusion made up more than 50 % of the total fluorine extracting amount, but it was higher more than 15 % in boiling method than in infusing method. In order to decrease the intake amount of fluorine and fluorine poisoning, people who drinking brick tea should increase the ratio of tea to water, shorten the boiling (or infusing) time, even throw away the first infusion or change the boiling method into infusion method.
