摘　　要：阐述啤酒生产中甲醛替代品的应用研究 ,并通过一系列生产实验 ,表明DHG澄清剂在糖化过程中替代甲醛 ,不仅可以提高最终酒体的非生物稳定性 ,还可以延长啤酒的风味稳定性。试验中还与单宁系列进行生产试验比较 ,进一步说明了DHG澄清剂具有更优越的效果 ,并且更具有更广泛的推广应用价值。This paper researched an application on the substitute for formaldehyde in beer brewing. A series of experiments showed that,as a substitute for formaldehyde,Hanjie clarifying agent in mashing,which could not only enhance the packaged beer's non-biological stability,but also prolong flavour stability of beer.By comparison of the experiments of tannin series,it further illuminated that the substitute has more predominant use effects and extensive apply and popularize value.
