酱香型白酒指纹图谱相似度的研究

摘　　要：采用气相色谱(GC)对酱香型白酒的指纹图谱相似度进行研究,以11个主要共有峰为评价指标,采用"中药色谱指纹图谱相似度评价系统"软件建立了11个酱香型白酒的GC共有指纹图谱,同时对不同样品之间的相似度进行计算。结果表明,气相色谱法操作简单,精密度、稳定性和重现性良好,采用该软件可有效分析酱香型白酒中部分香味成分的量比关系。The similarities of Jiangxiang Baijiu（liquor） fingerprints were studied by GC with 11 main common peaks as the evaluation indexe The 11 GC common fingerprints were established and the similarities between different samples were calculated by use of the software of Chines Medicine Chromatographic Fingerprint Similarity Evaluation System. The results showed that, GC was simple to operate with good precision, sta bility and reproducibility, and the use of the software could effectively analyze the quantity ratio of some flavoring components of Jiangxiang Ba jiu（liquor）.
