摘 要:【目的】研究商业化二氧化硫保鲜纸对无核白葡萄贮藏品质的影响,为无核白葡萄的贮藏保鲜选用合适的保鲜纸提供理论依据。【方法】选用4种商业化二氧化硫葡萄保鲜纸,分别对0℃预冷的无核白葡萄进行保鲜处理。贮藏期间,测定无核白葡萄果实的SO2残留量、漂白指数、失重率、硬度、腐烂程度的变化,分析探讨不同保鲜纸的药物残留和保鲜效果。【结果】T1、T2、T3和T4保鲜纸处理的葡萄果实中SO2最大残留量分别为25.91、49.40、7.66和6.50 mg/100 g;漂白指数与SO2残留量呈正相关,最大漂白指数分别为32.00%、35.80%、6.25%和10%,前两种保鲜纸漂白指数高于后两种,差异极显著;T3低于T4,差异极显著;各处理均延缓了硬度的下降,但无显著差异;70 d内各处理腐烂率低于对照,差异极显著,但处理之间无显著差异。【结论】4种商业保鲜纸对无核白葡萄均有较好的保鲜效果;SO2残留量均符合我国食品中SO2残留的限量标准(50 mg/100g),而且T3和T4保鲜纸达到FDA对食品中SO2残留的限量要求(10 mg/100g);综合药物残留和保鲜效果研究发现,T3和T4保鲜纸优于试验研究中的其他处理,对无核白葡萄的SO2伤害最小,食品安全性更高,适合用于无核白葡萄的短期贮藏保鲜。【Objective】The paper intends to study the effects of commercial sulphur dioxide preservation paper on postharvest quality of Thompson seedless grape in order to provide scientific basis for choosing appropriate preservation paper for fresh-keeping of Thompson seedless grape.【Method】4 kinds of commercial sulphur dioxide preservation paper were selected. The fruit of Thompson seedless grape which was cooled under 0℃ preservation processing was treated by the commercial preservation paper respectively. During storage,residual sulfur dioxide,bleaching index,the weight loss,firmness and rotting ratios were measured. A com-parative analysis of drug residues and preservation effects of different commercial preservation paper on Thompson seedless grape was conducted. 【Result】Maximum of residual sulfur dioxide in Thompson seedless grape treated by T1,T2,T3,T4 were 25. 91 mg/100 g,49. 40 mg/100 g,7. 66 mg/100 g and 6. 50 mg/100 g respectively. Bleaching index which were positively correlated to residual sulfur dioxide were 32. 00%,35. 80%,6.25% and 10% correspondingly. The last two were better to keep the firmness than the former twos,and they were significantly different; T3 was lower than T4 with significant difference; The four processing could put off the drop of firmness,but no significant difference; Rotting ratios of the four processing were lower than that of the control sample in 70 days with extremely significant difference,but no significant difference among various treatments.【Conclusion】The results showed four kinds of commercial preservation paper had fresh-keeping effect on Thompson seedless grape,and residual sulfur dioxide accorded with the requirements of national standards in China that is 50 mg/100 g,meanwhile T3 and T4 accorded with the requirements of FDA that is10 mg/100g; In consideration of drug residues and preservation,it was found that T3 and T4 were superior to others,sulfur dioxide injury in Thompson seedless grape was the least,food security is higher,and more suitable for k
