摘  要:通过监测储藏期间粳稻谷质量指标(过氧化物酶活性、脂肪酸值、峰值黏度、最终黏度)和挥发物质的变化,结合偏最小二乘分析法(PLS),在研究储藏条件对粳稻谷质量指标、挥发物质影响的基础上探讨两者之间的变化关系,初步建立了特征性挥发物质对质量指标变化的回归预测模型。研究结果表明:粳稻谷过氧化物酶活性随着储藏时间的延长而不断减弱;脂肪酸值、峰值黏度、最终黏度均随着储藏时间的延长而呈现波动上升的趋势。挥发物质中的1-次乙基-4-甲氧基苯、3,4-二甲氧基苯甲醛、2,3-二氢-1,1,3-三甲基-3-苯基-1H-茚、苯并噻唑、异硫氰基环己烷与脂肪酸值、峰值黏度、最终黏度呈现正相关,可作为判定粳稻谷劣变的特征性挥发物质;椰子醛、香叶基丙酮、6,10,14-三甲基-2-十五烷酮、二氢猕猴桃内酯、棕榈酸甲酯、1-壬醇、辛醛、2,6-二叔丁基苯醌、2-正戊基呋喃与过氧化物酶活性呈现正相关,可作为判定粳稻谷新鲜陈度的特征性挥发物质。Monitor the changes of japonica rice quality indexes (peroxidase activity, fatty acid value, peak vis- cosity, and final viscosity) and volatile substances during japonica rice storage, in order to investigate the relationship between the quality indicators and volatile substances by using the PLS2 method. The regression forecast mode/ of characteristic volatile substances and quality indexes was originally established. The results showed that the peroxi- dase activity of japonica rice is diminishing and fatty acid value, peak viscosity, final viscosity are fluctuating rise trend with the prolongation of the storage time. 1 - ethyl - 4 - methoxybenzene, 3,4 - dimethoxybenzaldehyde, 2,3 - dihydro - 1,1,3 - trimethyl - 3 - phenyl - 1 H - indene, benzothiazole, isothiocyanato - cyclohexane have a positive correlation with fatty acid value (FAV) , peak viscosity, final viscosity, and those volatile substances can be the char- acteristic indexes of the inferior japonica rice ; Coconut aldehyde, geranyl acetone ,6, 10,14 - trimethyl - 2 - Pentade- canone, dihydroactinidiolide, palmitie acid methyl ester, 1 - nonanol, octyl aldehyde, 2,6 - di - tert - butyl - p - benzoquinone, 2 -n -pentyl furan have a positive correlation with peroxidase (POD) activity, those volatile sub- stances can be the characteristic indexes of the fresh japonica rice.
