摘 要:本文以18种栽培蓝莓的乙醇提取物为研究对象,利用体外法研究了不同产区蓝莓提取物对DPPH自由基和羟基自由基的清除作用及还原能力,分别采用福林酚法、亚硝酸钠法和p H示差法测定了18种蓝莓中总酚、黄酮及花青素的含量,同时利用试管二倍稀释法测定了不同产区18种蓝莓提取物对副溶血性弧菌的抑制作用。结果表明,不同产区18种蓝莓对DPPH自由基及羟基自由基均具有良好的清除作用,对DPPH自由基清除率的范围为11%~65%,对羟基自由基清除率的范围为20%~64%,杭州产区的蓝莓还原能力强于上海及青岛两个产区;不同产区18种蓝莓的总酚、黄酮及花青素含量不同,总酚含量较高的蓝莓具有较好的抗氧化能力;不同产区18种蓝莓粗提液对副溶血性弧菌表现出不同程度的抑制作用,其MIC值最小的为15.625mg/m L,最大的为250mg/m L。由此可以得出,不同产区不同品种蓝莓在功能和活性成分上存在差异。The antioxidant capacities and antibacterial effects of 18 different blueberry cultivars from Hangzhou, Shanghai and Qingdao were investigated in this study. The antioxidant capacities of blueberry extracts were measured through free radical scavenging abilities including DPPH- and OH- free radicals and reducing power. The contents of total phenolics, flavonoids and anthocyanins were determined using Folin-Ciocalteu method, Sodium nitrite method and pH differential method respectively. The antibacterial effects of blueberry extracts against Vibrio parahaemolyticus were determined by the test tube two-fold dilution method.The results showed that 18 blueberry cultivars from three different areas showed good DPPH- and OH. free radical scavenging abilities with the range from 11%-65% and 20% -64%, respectively.The blueberry cultivars of Hangzhou showed stronger reducing power than those of the other two areas. 18 blueberry cultivars showed different antibacterial effects against Vibrio parahaemolyticus with the Minimal inhibitory concentration (MIC)and the Maximum inhibitory concentration(MBC) being of 15.625mg/mL and 250mg/mL, respectively. It can be concluded that there were differences in their function and components among different blueberry cultivars of different areas.
