摘 要:采用微波消解和火焰原子吸收法连续测定了荞麦和发芽荞麦样品中微量元素Zn、Ca、Cu、Pb、Se、Fe、Na和Mg的含量变化。首先,考察了火焰原子吸收法的精确度RSD处于0.1%-1.0%,回收率在95%-100%。其次,测定了荞麦发芽前后的Zn、Ca、Cu、Pb、Se、Fe、Na和Mg的含量。结果表明荞麦种子中,Ca离子含量最高,平均为18mg/g,其次为Fe、Mg、Na和Se,而Zn离子的含量较少,为2.4 mg/g左右,重金属离子Pb和Cu含量极少。发芽荞麦中上述矿物元素的含量均比荞麦种子略低(以湿重计)。结论可为开发荞麦保健食品和荞麦的深加工研究提供理论依据。The microwave digestion and FAAS determinate was used to analysis the content of Zn, Ca, Cu, Pb, Se, Fe, Na and Mg. First, the accuracy of FAAS was assessed. In selected conditions, RSD is from 0.1% to 1.0% and the recovery between 95% and 100%. Second, the content of mineral elements Zn, Ca, Cu, Pb, Se, Fe, Na and Mg was detected. The results showed that the content of Ca is the high, about 18 mg/g, followed by Fe, Mg, Na, Se and Zn ion content is about 2.4 mg/g, Pb and Cu is very low. Buckwheat germination of various mineral elements is much lower than those of buckwheat seeds. The results provide a theoretical basis for the development of health and deep-processing food products of buckwheat.
