摘 要:放线菌在浓香型白酒生产的发酵窖泥中普遍存在。为了探究不同窖龄窖泥中放线菌的变化规律,选取了两个知名酒厂窖龄分别为5年、20年、50年和1年、20年、50年的窖泥样品,并通过荧光定量PCR方法定量检测窖泥中放线菌的原始Copies数。结果表明,同一酒厂相同窖龄的不同窖池窖泥中,放线菌数量较为接近。随着窖泥窖龄的增加,放线菌的Copies数随之增加。研究结果为进一步揭示窖泥微生物变化规律以及判断窖泥的老熟程度提供了相关依据。Actinobacteria is commonly existed in pit mud of Nongxiang Baijiu(liquor). In order to investigate the change rules of Actinobacte-ria in pit mud of different pit age, pit mud samples from two famous distilleries with their pit age as 5 years, 20 years and 50 years, and 1 year, 20 years, and 50 years respectively were selected, the original Copies number of Actinobacteria in those samples were detected by Real-time PCR. The results showed that, the quantity of Actinobacteria was similar in pit mud from different pit of the same pit age and from the same dis-tillery;with the increase of pit age, the number of Copies increased. This study was helpful to further reveal the change rules of microbes in pit mud and to judge the aging degree of pit mud.
