摘 要:目的了解北京市顺义城区居民膳食营养状况及膳食结构变化趋势。方法选取北京市顺义区城区6个小区,每小区选取5户共30户作为调查户。采用连续7 d 24 h膳食称重法调查所有摄入的食物及调味品,计算每标准人日食物消费量。采用近1个月内食物频率问卷,调查含糖饮料等相关食品消费情况。结果城区居民平均每标准人日摄入谷类、薯类及杂豆、蔬菜、水果、畜禽肉类、鱼虾类、奶类、食用油、盐分别为355.3、483.5、166.6、94.8、40.6、69.9、35.0和8.5g;城区居民每标准人日摄入能量为1 904.6 kcal,蛋白质、脂肪、碳水化合物供能百分比分别为15.0%、34.2%和50.8%;城区居民含糖饮料每周至少饮用1次的饮用率为38.4%,每次摄入量为253 m L,平均1次饮用占全天总能量摄入的4.6%。结论顺义城区居民膳食营养状况逐步改善,但膳食结构不够合理,三大供能物质供能比不合理;城区居民膳食维生素A、硫胺素、核黄素和膳食钙、锌的摄入量不足;含糖饮料消费量相对不高。Objective To understand the urban residents' situation of dietary nutrition and changing tendency of dietary structure in shunyi district of Beijing. Methods Investigation was conducted in 6 communities selected from Shunyi district of Beijing city, and 5 families in every community were recruited in the investigation. In order to calculate the average food equivalent intake per day, continuous 7 days dietary weighting and 24 hours recall method were used to investigate all food and condiment intake, Food frequency questionnaire was used to investigate the consumption of sugary beverages and related food in recent a month. Results The average equivalent intake of cereal, potato and mixed beans, vegetables, fruit, livestock and poultry meat, fish, dairy, edible oil and salt per day are 355.3 g, 483.5 g and 166.6 g, 94.8 g and 40.6 g and 69.9 g and 35.0 g and 8.5 g respectively; The average energy equivalent intake per day is 1904.6 kcal, the percentages of protein, fat and carbohydrate in dietary energy supplying are 15.0% , 34. 2% and 15.0% respectively; The proportion of urban residents who drink sugary beverages at least once a week was 38.4% , the average volume of sugary beverages intake was 253 ml each time that accounted for 4. 6% in the total energy intake throughout the day. Conclusion Although the urban residents' situation of dietary nutrition was gradually improved, the dietary structure and three major dietary energy proportions were unreasonable. Urban residents' dietary intake of vitamin A, thiamine, riboflavin, calcium and zinc were insufficient; Sugary beverages consumption was relatively modest.
