摘 要:氯丙醇类物质是国际公认的强致癌物之一,常见于用浓盐酸水解的蛋白质水解液中。近年的研究发现,油脂、面包等食品也存在脂肪酸脂形式的氯丙醇。为了解深圳市食用植物油中氯丙醇酯的污染水平,本文在深圳市的超市、农贸市场抽取了33个样品,应用气相色谱质谱联用法对样品中的四类氯丙醇酯进行测定。检测结果表明:食用植物油受3-氯-1,2-丙二醇和2-氯-1,3-丙二醇污染的风险高于1,3-二氯-2-丙醇和2,3-二氯-2-丙醇。对不同种类和加工方式的食用植物油进行比较发现,采用压榨工艺制作的食用植物油更容易受氯丙醇酯的污染。Chloropropanol substances which were usually found in protein hydrolysate hydrolyzed by hydrochloric acid were internationally recognized as a strong carcinogen. The recently research showed that oils, bread and other foods also contained chloropropanol in fatty acid ester form. To understand the Shenzhen edible vegetable oil pollution levels of chlorine alcohol ester, 33 samples which were analyzed through GC-MS were collected in the supermarkets and farmers markets. The result show that the polluted risk of 3-MCPD and 2-MCPD was higher than 1,3-MCPD and 2,3-MCPD. The polluted risk of 3-MCPD and 2-MCPD was higher in vegetable oils produced by squeezing.
