摘 要:以壳聚糖、羧甲基壳聚糖和盐酸壳聚糖为材料,研究3种壳聚糖及其衍生物对DPPH自由基、超氧阴离子自由基和羟自由基的清除能力以及还原能力和抗脂质氧化能力,并通化曲线拟合方法明确壳聚糖及其衍生物的IC50值。结果表明,随着浓度的增加,壳聚糖及其衍生物的抗氧化活性逐渐增强。3种壳聚糖及其衍生物中壳聚糖的抗氧化活性最强,其对DPPH自由基、超氧阴离子自由基和羟自由基的半清除率IC50值分别为0.91、4.87、0.28 mg/m L。The antioxidant activity of chitosan, carboxymethyl chitosan and hydrochloride chitosan were studied. Three chitosan and its derivatives were measured the scavenging effect of DPPH radical, superoxide radical, hydroxyl radical, reducing ability and anti-peroxidation ability. The IC50 values of the chitosan and its derivatives were defined through curvet fitting method. The results indicated that the antioxidant activity of the chitosan and its derivatives were increased gradually with the increase of concentration. Chitosan was the strongest than others. Its IC50 values for the half scavenging effect of DPPH radical, superoxide radical and hydroxyl radical were 0.91, 4.87 and 0.28 mg/m L.
