摘　　要：糙米是一种典型的全谷物食品,其营养价值与保健功能越来越受到人们重视。欧美发达国家相继开展糙米全谷物食品开发研究。综述了新技术在糙米全谷物食品加工中的应用及新型糙米全谷物食品的开发进展,分析其产业发展中的一些问题,并展望了糙米全谷物食品研究开发方向。Brown rice is a typical whole-grain food,and its nutritional value and function of health care attract people＇s attention European and American countries have been carrying out research and development of whole grain brown rice foods.Review the progress in the development of new technologies in whole grain brown rice and new brown whole grain foods in food processing applications.Analyze some problems in the industrial development,and discuss the prospects for research and development direction of whole grain brown rice foods.
