摘 要:陶瓷膜是一种以陶瓷材料为介质制成的具有分离功能的膜。由于陶瓷膜工作时无需加热,能够完好地保持物料原有的特性,因此其被广泛应用于牛奶工业、酱油生产以及酿酒等食品行业中,它在果蔬汁加工中的应用也早就受到了人们的关注。在收集和整理相关资料的基础上,介绍了陶瓷膜的结构组成及其应用于果蔬汁澄清与除菌的机理,着重对近年来陶瓷膜在果蔬汁澄清与除菌中的应用研究作了较为全面的综述,并对陶瓷膜应用于果蔬汁加工中存在的问题以及未来的发展趋势进行了讨论。以期为今后的研究以及实践提供参考。Ceramic membrane is a kind of membrane with separation function made by ceramic material.It is widely used in food industries such as milk industry,soy sauce production and brewing since it can keep original features of material and have no need to heat,and more attention has been paid on its application on processing fruit vegetable juice.Based on the collection and collation of relevant information,describe the mechanism of the composition and structure of the ceramic membranes used in fruit vegetable juice clarification and sterilization,focusing on making a more comprehensive overview on the application of ceramic membranes in fruit and vegetable juice clarification and sterilization in recent years.In addiction,existing problems and further research directions of application of ceramic membrane in clarifying fruit vegetable juice clarification and sterilization were discussed to provide a reference for future research and practice.
