摘  要:对华贵栉孔扇贝软体部营养成分进行了分析测定及营养评价。结果表明,华贵栉孔扇贝软体部(鲜样)中,粗蛋白、粗脂肪、粗灰分、水分含量分别为14.30%,1.50%,2.30%和78.00%。华贵栉孔扇贝软体部(鲜样)含18种水解氨基酸,氨基酸总量为11.34%,其中必需氨基酸总量为3.96%,占氨基酸总量的34.92%;鲜味氨基酸总量为4.94%,占氨基酸总量的43.56%。华贵栉孔扇贝软体部的限制性氨基酸为缬氨酸、苏氨酸和色氨酸,必需氨基酸指数(EAAI)为77.28。多不饱和脂肪酸(PUFA)占脂肪酸总量的33.52%,其中EPA,DHA含量占脂肪酸总量的21.38%。矿物质含量丰富,尤其铁(Fe)含量较高;维生素E含量也较丰富。表明华贵栉孔扇贝是一种营养价值较高的贝类,具有较好的开发前景。Contents of nutritional components in edible part of Chlamys nobilis were determined and evaluated.Results showed that the contents of protein,crude fat,total ash and water was 14.30%,1.50%,2.30%and 78.00%,respectively.Eighteen common amino acids were found in edible part of C.nobilis.In wet sample,the total contents of amino acids(TAA) were 11.34%;The contents of essential amino acids(EAA) and delicious amino acids(DAA) were 3.96%and 4.94%,respectively;EAA/TAA ratio and DAA/TAA ratio were 34.92%and 43.56%,respectively.According to nutrition evaluation in amino acids score(AAS),the first limited amino acid was Val and the second limited amino acid was Thr.According to nutrition evaluation in chemical score(CS),the first limited amino acid was Val and the second limited amino acid was Trp.The essential amino acids index(EAAI) was 77.28.The contents of poly unsaturated fatty acids(PUFA) were 33.52%,and the contents of EPA and DHA were totally 21.38%.The composition of mineral elements in the edible part of C.nobilis was rich.The mineral elements such as Fe were richer than those in other bivalves.The contents of VE in vitamins were richer than those in other bivalves,In conclusion,this investigation indicates that C.nobilis is a nutritive and delicious shellfish.C.nobilis has promising prospects for further development.
