摘 要:菊苣是药食同源的菊科菊苣属植物,原产于欧洲地中海地区、亚洲中部和北非,现广泛分布于世界各地。目前已在我国华北和山东地区大面积人工栽培。菊苣具有清肝利胆、健胃消食、利尿消肿等功效,还含有一般蔬菜中没有的苦味物质,如香豆素类物质马栗树皮素、马栗树皮苷、野莴苣苷,半萜类物质山莴苣苦素、山莴苣素,这些物质具有消炎、镇静、保肝等作用。其中倍半萜内酯是该属植物呈苦味和抗拒食活性主要原因。菊苣中倍半萜内酯成分显示出明显的保肝作用。菊苣作为一种宝贵的植物资源,其开发利用具有广阔的前景。除作为蔬菜、牧草和传统的咖啡替代品应用外,还可用于保健饮品、功能性食品等的研究开发。该文对菊苣中主要的苦味物质及目前的研究情况进行了归纳总结,为菊苣系列产品的研究与开发提供新的思路。Compositae plant Cichorium intybus L. is a kind of medicinal and edible food, which originating in Europe' s Mediterranean region, central Asia and north Africa and is now widely distributed around the world. In north China and Shandong province grow a lot of intybus. It can clear liver and gallbladder, promote digest and diuresis detumescence. It contains bitter substances such as Esculetin, Esculin, Cichoriin, Lactucin, Lactucopicrin which are not existed in ordinary vegetables. These bitter substances have the function of anti-inflammation, sedation and liver protection. The bitter tastes and resisting of food activities are due to Sesquiterpene lactone which has obvious hepatoprotective effects. As a kind of precious plant resources, Intybus has a broad developing and utilizing prospect. Except as a vegetable, forage grass and traditional coffee alternatives, it can also be used for the research and development of healthy drinks and functional food. This paper summarizes the research of bitter substances in intybus. Meanwhile, some new thoughts provided in the paper can help to develop the bitterness beverage and functional foods.
