摘  要:以目前常用尼龙编织袋包装为对照,采用不同气调包装贮藏方式(100%CO2,100%N2,100%空气及真空和它们的不同比例)进行大米为期10个月的贮藏,定期测定大米含水量、脂肪酸值、过氧化氢酶活性、黏度及蒸煮品质。结果表明,在黑龙江省自然贮藏环境下,N2及真空包装能够显著提高上述各大米保鲜品质指标,可有效保持大米新鲜品质,在黑龙江大米包装及高端米开发领域具有广阔的应用和发展前景。Compare with Nylon woven bag, ten month storage of rice is conduct by adopting different natural storage gas packaging (100% CO2, 100% N2, 100% air and vacuum and their different proportions) of rice for a period of ten months of storage, including periodic determination of rice water, fatty acid value, catalase activity, viscosity and cooking quality. The results show that under the Heilongjiang province natural storage environment, with N2 and vacuum packaging can significantly increase above the rice fresh quality indicators effectively keep rice fresh quality, will have broad application and development prospects in Heilongjiang rice packaging and high-end rice development areas.
