摘  要:目的了解2012和2013年广州市番禺区餐饮行业的食品污染状况。方法按番禺区餐饮行业A、B、C 3个等级分布情况,采集5类食品(蔬菜、禽畜肉、大米、熟肉制品和食用油),同时抽取有代表性的超市、肉菜市场作同步监测,结合番禺区过去5年在超市、肉菜市场的监测数据进行对比分析。结果 12012和2013年,番禺区5类食品合格率分别为91.65%和92.54%,较2007—2011年的合格率(78.46%)有所提升(χ2=24.24,χ2=28.18,均P<0.01)。22012—2013年餐饮单位与超市、肉菜市场的合格率比较,蔬菜、禽畜肉、大米、食用油4类食品无统计学差异(均P>0.05),而熟肉制品类食品差异有统计学意义(P<0.05);3、A级餐饮单位5类食品合格率明显高于B和C级餐饮单位,但A和B级比较,差异无统计学意义(χ2=3.07,P>0.05);A和C级比较,差异有统计学意义(χ2=10.03,P<0.01)。不合格项目中主要为铅、镉,大肠菌群等指标,主要分布于蔬菜、禽畜肉和熟肉制品中。结论番禺区5类食品合格率基本稳定,餐饮单位量化分级管理初见成效,该区应继续做好餐饮单位食品污染物动态监测,以减少食品安全事故的发生。[Objective]To understand the food contamination status of catering industry in Fanyu District of Guangzhou City from 2012-2013.[Methods]Five kinds of food (vegetables, meat, rice, cooked meat products and edible oil) were collected from 3 levels restaurant (Class A, B, C) and representative supermarket and market for monitoring, and the data combining the past 5 years of monitoring data in Fanyu area were analyzed.[Results]( 1 ) The qualified rate of 5 kinds food in 2012-2013 (91.65% and 92.54% ) was better than that of 2007-2011 (78.46% ; χ2=24.24, χ2=28.18, all P〈0.01 ). ( 2 ) The qualified rates of vegetables, meat, rice, edible oil were not significantly different between supermarket and market in 2012 and 2013, except for cooked meat products(P〈0.05 ).(3 )The qualified rates of 5 kinds of food in Class A catering units were significantly higher than that of Class B and Class C, the difference between Class A and Class B was not significant (χ2=3.07,P〉0.05), the difference between Class A and Class C was significant(χ2=10.03,P〈0.01 ).The main unqualified items were lead, cadmium and escherichia coli group, etc, mainly distributed in vegetables, meat and cooked meat products. [Conclusion]The qualified rates of 5 kinds of food is basically stable in Fanyu District. Quantitative classification management in catering units has achieved good results and food contaminants dynamic monitoring should be continued to reduce food safety accident.
