摘 要:为研究不同干燥方法对淫羊藿多糖化学性质及抗氧化活性的影响,以粗毛淫羊藿为材料制备多糖。测定热风干燥多糖(EAP-H)、真空干燥多糖(EAP-V)和真空冷冻干燥多糖(EAP-F)的中性糖、糖醛酸和蛋白质含量,单糖组成及DPPH自由基、羟基自由基和超氧阴离子的清除能力。结果表明:淫羊藿多糖为含有少量蛋白质的酸性多糖,不同干燥方法将会影响其单糖组成和糖醛酸含量;EAP-F糖醛酸含量最高并具有最强的DPPH自由基、羟基自由基和超氧阴离子清除能力。因此,真空冷冻干燥是制备淫羊藿多糖的最佳干燥方法。The study aimed to explore the effect of drying methods on the chemical properties and antioxidantactivities of polysaccharides extracted from Epimedium, three polysaccharides ( EAP- H, EAP- V, EAP- F) wereobtained from Epimedium acuminatum Franch.via methods such as air drying,vacuum drying and vacuum freezedrying,respectively.Their neutral sugar, uronic acid and protein content were studied, and antioxidant activitieswere investigated on the basis of assay for DPPH radical, hydroxyl radical, superoxide anion free radicalscavenging ability. Results showed that Epimedium polysaccharides were acidic polysaccharides containing asmall amount of protein,different drying methods could affect their monosaccharide composition and uronic acidcontent compared with air drying and vacuum drying methods, vacuum freeze drying method resulted toEpimedium polysaccharides with higher uronic acid content,stronger antioxidant abilities of DPPH radical,hydroxylradical and superoxide anion free radical scavenging ability.As a result, vacuum freeze drying method was thebest choice for the preparation of the Epimedium polysaccharides.
